Equipment

  • 1 Dutch oven

Method

Cook the pasta
  1. Bring a large pot of salted water to a boil and cook the rigatoni or penne until al dente. Reserve 1 cup of pasta water, then drain.
Make the sun-dried tomato sauce
  1. In a Dutch oven over medium heat, warm the sun-dried tomato oil until it shimmers. Sauté the garlic and chopped sun-dried tomatoes for 2 minutes, stirring until fragrant.
  2. Add the tomato paste and cook for 1 minute, stirring to deepen the color. Keep it moving to avoid scorching.
  3. Stir in the coconut cream, Italian seasoning, red pepper flakes, and nutritional yeast. Simmer for 5 minutes, stirring occasionally, until the sauce looks creamy.
Toss and finish
  1. Add the drained pasta to the sauce and toss to coat, adding reserved pasta water as needed for a silky texture. Use more water if it looks too thick.
  2. Add the baby spinach and toss until wilted, about 1 minute. Stir through so the spinach is evenly distributed.
  3. Season with salt and pepper to taste, then top with fresh basil. Finish with extra nutritional yeast if desired.

Notes

Pro tip: reserve more pasta water than you think you’ll need—coconut cream thickens as it sits, and a splash helps the sauce cling to every tube. Refrigerate leftovers in a covered container for up to 4 days; reheat gently with a tablespoon or two of water. Freezing is not recommended because the coconut cream can separate slightly after thawing. For a lighter option, use light coconut cream and add 2–4 tbsp extra pasta water to keep the sauce creamy.
