Ingredients

For meatballs
  • 1.5 lb ground pork or beef
  • 0.33 cup pumpkin puree
  • 0.33 cup breadcrumbs
  • 0.25 cup parmesan
  • 1 egg
  • 1 tbsp fresh sage, minced
  • 3 garlic, minced
  • 1 tsp salt
  • 0.5 tsp pepper
For pumpkin cream sauce
  • 1 cup pumpkin
  • 1 cup heavy cream
  • 3 garlic
  • 0.5 cup parmesan
  • 0.25 tsp nutmeg
  • 1 tbsp fresh sage

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Make the meatballs
  1. In a large skillet, mix ground pork or beef with pumpkin puree, breadcrumbs, parmesan, egg, minced fresh sage, minced garlic, salt, and pepper until just combined. Stop mixing as soon as no dry crumbs remain.
  2. Roll the mixture into 1.5-inch balls and place them on a sheet pan. Keep them uniform so they cook evenly.
  3. Heat olive oil in the cast iron skillet over medium-high heat, then brown the meatballs on all sides and transfer them to a plate. Cook until the outsides are golden and set, about 4 to 6 minutes per batch.
Simmer in pumpkin cream sauce
  1. In the same skillet, sauté garlic until fragrant, then add pumpkin, heavy cream, parmesan, and nutmeg. Stir to combine until the sauce looks smooth.
  2. Simmer the sauce for 5 minutes, stirring occasionally, until slightly thickened and steaming. You should see small bubbles around the edges.
  3. Return the browned meatballs to the sauce and simmer for 15 minutes until cooked through. Keep the sauce at a gentle simmer so the meatballs stay tender.
Finish and serve
  1. Fry fresh sage until crisp and bright green, then top the meatballs with the crispy sage and extra parmesan. Add it right before serving so the sage stays crunchy.
  2. Serve the pumpkin sage meatballs over pasta or polenta with the creamy sauce. Spoon sauce generously so every bite is coated.

Notes

Pro tip: Keep mixing for the meatballs only until combined—overworking makes them dense. Store leftovers in the fridge up to 3 days in a covered container; reheat gently in a skillet with a splash of cream or water. Freezing is not ideal because the cream sauce can separate, but you can freeze meatballs alone and reheat in freshly warmed sauce. For a lighter option, swap heavy cream for evaporated milk or a cooking cream with lower fat while simmering to maintain a similar thickness.
