Chicken
  • 4 boneless skinless chicken breasts
  • 1 salt to taste
  • 1 pepper to taste
  • 1 garlic powder to taste
  • 1 smoked paprika to taste
Skillet sauce and finishing
  • 2 tbsp olive oil
  • 6 tbsp butter
  • 3 cloves garlic minced
  • 0.333 cup honey
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 fresh thyme for garnish
  • 1 flaky sea salt for garnish

Method
 

Sear the chicken
  1. Season the chicken breasts all over with salt, pepper, garlic powder, and smoked paprika, then add olive oil to a large skillet and heat over medium-high until shimmering. Sear for 5-6 minutes per side until deep golden, reaching 165°F internal temperature, then remove to a plate.
Make the honey butter sauce
  1. Melt the butter in the same pan over medium heat, scraping up browned bits as it foams. Add the minced garlic and cook for 1 minute until fragrant (visual cue: lightly golden garlic).
  2. Stir in honey, soy sauce, and apple cider vinegar, then bring the mixture to a simmer. Continue simmering until it looks glossy and cohesive (visual cue: small bubbling across the surface).
Glaze and finish
  1. Return the chicken to the pan and cook for 2-3 minutes, turning and basting as the sauce thickens. Keep going until the sauce caramelizes and coats the chicken (visual cue: amber glaze clings to the surface).
  2. Plate the chicken and drizzle with any remaining sauce from the skillet. Finish with fresh thyme leaves and flaky sea salt for a bright, savory top note.

Notes

For the best glossy coating, don’t rush the caramelization step—baste and turn until the glaze looks amber and clings to the chicken. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently in a skillet over low heat with a splash of water. Freezing is not recommended because the honey-butter glaze can separate after thawing. If you want a lower-sodium swap, use low-sodium soy sauce while keeping the same amounts.
