Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
Mango Pineapple Marinade and Glaze
  • 1 cup mango fresh or frozen, pureed
  • 1 1/2 pineapple juice
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 3 clove garlic minced
  • 1 tsp ginger fresh, grated
  • 1 tsp red pepper flakes
  • 1 tsp cornstarch mixed with water for slurry
  • 1 tbsp water
For Serving
  • 4 pineapple rings for grilling
  • 1 fresh cilantro for garnish
  • 1 lime wedges for serving

Method
 

Make the mango pineapple marinade and glaze
  1. Blend or whisk together mango puree, pineapple juice, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes until smooth. Reserve half of the mixture for the glaze.
  2. Simmer the reserved marinade in a small saucepan over medium heat and stir in the cornstarch slurry. Cook 2-3 minutes until thickened into a glaze, then set aside.
Marinate and grill the chicken
  1. Marinate the chicken breasts in the remaining mixture for at least 30 minutes. Keep refrigerated while marinating for safe results.
  2. Preheat the grill to medium-high and oil the grates to prevent sticking. Grill the chicken for 5-6 minutes per side.
  3. Brush the chicken with glaze each time you flip. Continue grilling until the internal temperature reaches 165°F.
Caramelize the pineapple and serve
  1. Grill the pineapple rings alongside the chicken for 2-3 minutes per side until caramelized. Add them to the plate as soon as they’re browned and glossy.
  2. Rest the chicken for 5 minutes, then serve with grilled pineapple rings. Drizzle extra glaze over the top and finish with fresh cilantro and lime wedges.

Notes

For best color and caramelized glaze, brush each flip right after turning and keep the grill at medium-high (avoid flare-ups). Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently to avoid drying. Freezing is not recommended due to the glaze texture. For a lower-sugar option, replace honey with an equal amount of a honey-style sugar substitute meant for cooking.
