Ingredients
  

chicken breasts
  • 1.5 lb boneless skinless chicken breasts, cut into bite-sized pieces
cornstarch
  • 0.25 cup cornstarch
all-purpose flour
  • 0.5 cup all-purpose flour
seasonings

vegetable oil

firecracker sauce
  • 0.25 cup hot sauce (Frank's RedHot)
  • 0.25 cup brown sugar
  • 3 tbsp butter
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes Use 1/2 to 1 tsp for your heat preference.

Method
 

Coat the chicken
  1. Toss the chicken with cornstarch, flour, salt, pepper, and garlic powder until every piece is evenly coated. Keep the coating dry-looking and clinging before frying.
  2. Marinate the coated chicken for 20 minutes. Let it rest so the breading adheres closely to the chicken surface.
Fry until crispy
  1. Heat about 1/2 inch of vegetable oil to 375°F in a cast iron skillet. Drop in chicken in a single layer and avoid overcrowding.
  2. Fry chicken for 3-4 minutes per side until golden and cooked through, turning once. The coating should look crisp and deep golden with a sturdy crust.
  3. Drain the fried chicken on a rack or paper towels immediately. Remove excess oil so the sauce clings instead of sliding off.
Make the firecracker sauce
  1. Combine hot sauce, brown sugar, butter, apple cider vinegar, soy sauce, garlic powder, and red pepper flakes in a saucepan over medium heat. Stir until the butter melts and the sauce becomes smooth.
  2. Continue cooking the sauce 2-3 minutes until glossy and slightly thickened. Watch for a vivid red-orange color with visible red pepper flakes.
Toss and caramelize
  1. Toss the crispy chicken in the sauce until every piece is fully coated. Coat thoroughly so the caramelized glaze forms around the crust.
  2. Return the sauced chicken to the pan and cook 1-2 minutes to caramelize. Look for a sticky, shiny coating that glows red-orange and clings firmly.
Serve
  1. Serve the firecracker chicken over steamed rice. Finish with sesame seeds and sliced green onions for bright contrast.

Notes

For best crispness, fry in small batches and keep the oil at a steady 375°F so the coating sets quickly. Refrigerate leftovers in an airtight container for up to 3 days, then reheat in a hot oven or skillet to re-crisp. Freezing is not recommended because the crunchy coating softens after thawing. For a lower-carb option, swap the flour-cornstarch dredge for an all-purpose gluten-free flour blend or use a light cornstarch-only coating.
