Pork chops
  • 4 thick bone-in pork chops
  • 1 Salt and pepper to taste
  • 1 tbsp garlic powder
  • 2 tbsp oil
Aromatics and sauce
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1.5 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 Fresh parsley for garnish

Method
 

Preheat and sear
  1. Preheat oven to 300°F so it’s ready for low-and-slow braising. The pan should be set up on the stove for searing.
  2. Season thick bone-in pork chops with salt, pepper, and garlic powder. Heat oil in a Dutch oven over medium-high heat and sear until browned, 3–4 minutes per side, then set aside.
Build the braising gravy
  1. Cook onion in the same pan until softened, about 4 minutes. Add garlic and cook for 30 seconds, stirring until fragrant (do not brown).
  2. Whisk cream of mushroom soup with chicken broth and Worcestershire sauce until smooth. Pour the mixture into the pan and scrape up the browned bits for a richer gravy.
Braise until fork-tender
  1. Nestle the thick bone-in pork chops back into the liquid, making sure they sit in the gravy. Sprinkle dried thyme over the top for flavor.
  2. Cover tightly with foil and braise in the oven at 300°F for 1.5–2 hours until fork-tender. Visual cue: the pork should shred easily with a fork and the gravy should look silky and slightly reduced.
Finish and serve
  1. Garnish with fresh parsley. Serve the braised pork chops over mashed potatoes with the golden-brown gravy spooned around.

Notes

For the most melt-in-your-mouth texture, keep the Dutch oven covered tightly with foil so steam stays trapped; avoid uncovering during the 1.5–2 hour braise. Refrigerate leftovers in an airtight container up to 4 days; reheat gently in a covered pot or microwave until hot. Freezing: yes, freeze portions for up to 2 months and thaw overnight in the fridge. For a lower-sodium option, choose a reduced-sodium cream of mushroom soup and low-sodium chicken broth.
