Prep and season
- Preheat the oven to 425°F and line a baking sheet with parchment.
- Mix the olive oil with smoked paprika, sweet paprika, garlic powder, onion powder, salt, and pepper.
- Brush the paprika oil generously over both sides of each chicken breast.
- Combine Parmesan and panko, then press firmly onto the oiled chicken to coat the tops.
Bake
- Bake at 425°F for 22-25 minutes until the crust is golden-red and the internal temperature reaches 165°F.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
For the most caramelized, crackled crust, press the Parmesan-panko firmly so it adheres to the oiled surface before baking. Refrigerate leftovers in a covered container for up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended for best texture. For a lower-carb option, replace panko with finely ground Parmesan crumbs or finely crushed baked chicken coating-style crumbs if desired.
