Season and sear the pork chops
- Season the pork chops with salt, pepper, and garlic powder.
- Heat the oil in a large skillet over medium-high heat and sear the chops 4 minutes per side until golden; set aside.
Simmer the pineapple BBQ sauce
- In the same pan, sauté the garlic for 30 seconds.
- Stir in the BBQ sauce, pineapple juice, brown sugar, and soy sauce, then simmer for 3 minutes.
Caramelize pineapple and finish cooking
- Add the pineapple rings and cook 2 minutes per side until caramelized.
- Return the pork chops to the pan, spoon the sauce over them, and simmer 3–4 minutes until cooked through.
Serve
- Garnish with green onions and serve.
Notes
For the most caramelized pineapple, keep the pineapple rings in a single layer and avoid stirring during the 2 minutes per side. Refrigerate leftovers in a covered container for up to 3 days; reheat gently in a skillet until warmed through. Freezing is not recommended because the pineapple sauce can lose texture. If you want a lower-sugar option, use a reduced-sugar BBQ sauce and keep the brown sugar the same or reduce slightly to taste.
