Prep
- Preheat the oven to 350°F and grease a 9x13 baking dish so the casserole releases easily after baking.
- Whisk together cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, and garlic powder until smooth.
Assemble
- Combine cooked spaghetti, shredded chicken, soup mixture, green chiles, bacon, bell pepper, and onion; toss to coat and then season with salt and pepper.
- Spread the mixture into the prepared dish and top evenly with 1/2 to 1/2 of the cheese blend.
Bake
- Bake for 25-30 minutes at 350°F until the casserole is bubbly and the cheese is golden.
- Garnish with fresh parsley and let the baked spaghetti casserole rest briefly before serving for cleaner slices and scoops.
Notes
For best texture, use cooked spaghetti that’s just cooked (not overdone) so it stays pleasantly tender in the bake. Store leftovers covered in the refrigerator up to 3-4 days; reheat until steaming. Freezing is not recommended because sour-cream-based casseroles can change texture after thawing. For a lighter version, use low-fat sour cream and a reduced-fat cheese blend while keeping the same bake time.
