Roast the taco potatoes
- Preheat the oven to 425F. Toss the cubed Yukon gold potatoes with taco seasoning and olive oil so every piece looks evenly coated.
- Spread the potatoes in a single layer on a sheet pan. Roast for 25-30 minutes, turning once halfway through, until the edges look crispy and the cubes are golden-brown.
Cook the taco beef
- Brown the ground beef in a pan over medium-high heat until no pink remains. Add taco seasoning and water, then simmer for 3 minutes until it looks glossy and clings to the beef.
Build the taco bowls
- Divide the crispy potatoes among 4 bowls, keeping them on the bottom. Top with the taco beef, then add warm black beans and corn so the layers are visible.
- Add shredded cheddar, sour cream, pico de gallo, avocado, jalapeño, and cilantro on top. Finish each bowl with a squeeze of lime right before serving.
Notes
For maximum crispness, roast the potatoes on a preheated sheet pan and avoid overcrowding—use two pans if needed. Refrigerate leftovers in separate containers for up to 3 days; reheat potatoes in a hot oven or air fryer to help them regain texture (freezer not recommended for best crunch). For a lighter option, use lean ground beef (or ground turkey) and choose reduced-fat cheddar and sour cream.
