Slow-cook the chicken
- Place bone-in skin-on chicken thighs skin-side up in the slow cooker, arranging them in a single layer. Press them down so they sit stable for even cooking.
- Whisk together honey, soy sauce, minced garlic, ketchup, apple cider vinegar, ground ginger, red pepper flakes, and black pepper until smooth. The sauce should look glossy and evenly combined.
- Pour the honey garlic sauce over the chicken thighs, making sure most of the surface is covered. Let any extra pool around the thighs for flavor.
- Cook on low for 5–6 hours until the chicken is cooked through and tender, or cook on high for 2.5–3 hours for a faster finish. Look for juices running clear when pierced.
- Remove the chicken and set it aside on a plate. Keep it warm while you thicken the sauce.
Thicken and finish
- Whisk cornstarch and cold water together until smooth, then stir it into the remaining sauce in the slow cooker. The mixture should disappear with no lumps.
- Cook on high for 15 minutes until the sauce thickens and turns glossy. You should be able to coat the back of a spoon.
- Optional: broil the chicken for 3–4 minutes to caramelize the skin. Watch closely until the skin looks browned and slightly blistered.
- Spoon the thickened honey garlic sauce over the chicken and garnish with sesame seeds and green onions. Serve with extra sauce pooled on the plate for dipping.
Notes
For best cling and tenderness, keep thighs skin-side up during the slow cook so the glaze coats as it reduces. Store leftovers in a covered container in the refrigerator for up to 3 days; reheat gently in a skillet or microwave until hot.
