Method
Sear the roast
- Preheat oven to 325F. Pat the beef chuck roast dry and sear it in olive oil until deeply browned, then remove to a plate.
Caramelize the onions
- In the same Dutch oven, melt the butter over medium-low heat. Add the thinly sliced onions and cook 30-35 minutes, stirring as needed, until deeply caramelized.
Deglaze and build the braise
- Add the minced garlic to the onions and cook for about 30 seconds. Pour in the dry white wine (or beef broth) to deglaze, scraping up browned bits from the bottom.
- Stir in the beef broth, Worcestershire sauce, fresh thyme, and bay leaves. Bring to a gentle simmer.
Braise until fall-apart tender
- Return the roast to the Dutch oven, spoon some broth over it, and cover. Braise for 3 to 3-1/2 hours at 325F until the beef is fall-apart tender.
Finish with Gruyere and broil
- Remove the bay leaves, then shred the beef in the broth. Taste and adjust with salt and pepper as needed.
- Ladle into bowls and float toasted baguette on top. Sprinkle with shredded Gruyere.
- Broil 3-4 minutes until the cheese is golden and bubbly.
Notes
Pro tip: thinly slice the onions and keep heat at medium-low so they caramelize rather than steam. Refrigerate leftovers in an airtight container up to 4 days; reheat gently in a covered pot or microwave. Freezing is yes—freeze pot roast (without broiling the cheese) up to 3 months, then thaw and rewarm before broiling the baguette with Gruyere. For a lighter option, use reduced-fat Gruyere (or half Gruyere/half part-skim mozzarella) while keeping the same braise for tenderness.
