Ingredients

chicken thighs
  • 2 lb boneless skinless chicken thighs
cream soup
  • 2 can (10.5 oz) cream of chicken soup
broth
  • 2 cup chicken broth
peas and carrots
  • 1 cup frozen peas
  • 1 cup carrots, diced
celery and onion
  • 1 cup celery, sliced
  • 1 small onion, diced
garlic and seasonings
  • 3 clove garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
dumplings
  • 1 can (16.3 oz) refrigerated biscuits (8 count), quartered
garnish
  • 1 fresh parsley for garnish

Equipment

  • 1 slow cooker

Method

Cook the chicken and broth
  1. Place the boneless skinless chicken thighs into the slow cooker. Spread them out so the cooking juices circulate evenly around the chicken (visual cue: pieces are in a single layer).
  2. Add the cream of chicken soup, chicken broth, carrots, celery, onion, garlic, garlic powder, onion powder, thyme, salt, and black pepper to the slow cooker. Stir gently just to combine (visual cue: vegetables and herbs are suspended in the creamy liquid).
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender. You’ll know it’s ready when the chicken pulls apart easily with a fork (visual cue: broth looks thick and bubbling gently).
Shred and finish the filling
  1. Remove the chicken from the slow cooker and shred it with two forks, then return the shredded chicken to the pot. Keep the broth and vegetables mixed as you return the chicken (visual cue: shredded strands distribute throughout the creamy mixture).
  2. Stir in the frozen peas and taste to adjust seasoning. Let the mixture look evenly speckled with peas (visual cue: peas start to brighten as they warm through).
Cook the biscuit dumplings
  1. Place the quartered refrigerated biscuit pieces on top of the chicken mixture, then cover. Distribute them across the surface so they steam instead of clumping (visual cue: biscuits sit like small chunks above the broth).
  2. Cook on high for 1–1.5 hours until the biscuits are cooked through and fluffy. Keep the lid on during cooking (visual cue: biscuit pieces look puffed and set, not doughy).
Serve
  1. Serve immediately and garnish with fresh parsley. Finish with a fresh-green sprinkle right before eating (visual cue: parsley adds contrast over the creamy surface).

Notes

Pro tip: for best texture, avoid stirring after the biscuit pieces go on top—just let them steam and puff. Store leftovers in the refrigerator up to 3 days; reheat in the microwave or on the stovetop with a splash of broth. Freezing is not recommended because the biscuits can soften when thawed. If you want a lighter option, use reduced-fat cream of chicken soup and add an extra 1/2 cup chicken broth to keep the filling creamy.
