Mix and season
- In a bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, and black pepper until evenly combined. The mixture should look like a uniform red-orange spice blend with visible specks.
- Rub the spice mixture all over the chicken thighs, pressing lightly so it adheres to the skin. Cover every side so the thighs develop a deep red-orange crust as they cook.
Crockpot cook
- Place the seasoned chicken thighs in the slow cooker and add minced garlic and chicken broth around them. Arrange them in a single layer if possible so the butter can melt evenly.
- Lay the sliced butter on top of each chicken thigh so it starts melting during cooking and pools in the bottom of the pot. This will create the golden butter sauce you’ll spoon over the finished chicken.
- Cook on low for 5–6 hours, or high for 2.5–3 hours, until the chicken reaches 165°F. The meat should be fork-tender and coated in a glossy red-orange butter sauce.
Finish and serve
- Optional: broil the chicken for 3–4 minutes to crisp the skin. Look for browned, crisped spots while keeping the spices intact.
- Spoon the butter sauce from the slow cooker over each piece and serve over cooked rice or mashed potatoes, garnished with fresh parsley. The sauce should look golden and thick enough to cling to the chicken and sides.
Notes
For the most flavorful sauce, keep the butter sliced thin so it melts quickly and disperses through the broth. Refrigerate leftovers in a sealed container for up to 4 days; reheat gently until hot throughout. Freezing is okay for up to 2 months, though the skin may soften. If you want a lighter option, swap half the butter for olive oil (still slice the remaining butter) while keeping the spices and broth the same.
