  • 1.5 cup BBQ sauce
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper
  • 1 toasted brioche buns for serving
  • 1 pickles for serving
  • 1 coleslaw for serving
  • 0.5 cup BBQ sauce for extra serving

Method
 

Add chicken to the slow cooker
  1. Place the boneless skinless chicken thighs in the slow cooker in an even layer. Make sure the pieces are mostly flat so they cook uniformly.
Make the BBQ sauce mixture
  1. Mix the BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, and cayenne pepper in a bowl until the sugar dissolves and the color looks evenly blended. This should look glossy and uniform.
Cook until tender
  1. Pour the sauce over the chicken so it covers as much surface area as possible. Spoon any pooled sauce over top for better coating.
  2. Cook on LOW for 6–7 hours or on HIGH for 3–4 hours until the chicken is tender and pulls apart easily. Look for steam rising consistently and strands separating with light pressure.
Shred and finish in the sauce
  1. Remove the chicken from the slow cooker and shred it with two forks. The shreds should break into bite-size pieces without being dry.
  2. Return the shredded chicken to the slow cooker and stir into the sauce until coated. The sauce should cling to the chicken and look sticky.
Serve
  1. Serve the shredded BBQ chicken on toasted brioche buns with pickles, coleslaw, and extra BBQ sauce. Add the toppings generously so the sandwich is saucy and crunchy.
