Season and sear the tenderloin
- Season the pork tenderloins with salt and pepper, then pat lightly so the surface adheres evenly. Keep them at room temperature while you preheat the skillet.
- Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat, then sear the tenderloins 2–3 minutes per side until deep golden. Transfer the skillet to a 400°F oven for 15–18 minutes until the center reaches 145°F.
- Rest the tenderloins 5 minutes, then slice into medallions with a steady cut. The juices should redistribute so the slices stay moist.
Make the mushroom cream sauce
- In the same skillet, melt 2 tbsp butter over medium heat and cook the sliced cremini mushrooms for 5 minutes until golden. Stir often so they brown rather than steam.
- Add the minced garlic and fresh thyme, and cook 30 seconds until fragrant. Keep the heat moderate to avoid scorching.
- Deglaze with the dry white wine, scraping up browned bits from the skillet bottom. Simmer for 2 minutes to reduce slightly.
- Stir in the heavy cream, Dijon mustard, and grated parmesan, then simmer until thickened to a silky pan sauce. Reduce heat if needed to maintain a gentle simmer.
Serve
- Spoon the creamy mushroom sauce onto plates and lay the pork tenderloin medallions on top. Garnish with fresh parsley so you can see herb flecks in the golden sauce.
Notes
Pro tip: if the sauce looks thin after simmering, keep it at a gentle simmer for 1–2 minutes more so it coats the back of a spoon. Store leftovers in the refrigerator up to 3 days; reheat gently to avoid breaking the cream. Freezing: not recommended for the best texture of the cream sauce. For a lighter option, use half-and-half instead of heavy cream (the sauce will be thinner but still flavorful).
