Add ingredients to slow cooker
- Add diced potatoes, diced onion, and minced garlic to the slow cooker.
- Pour the chicken broth over the vegetables.
- Add the ranch seasoning mix, garlic powder, and black pepper, then stir to combine, scraping the bottom so seasoning is evenly distributed.
Cook until tender
- Cook on LOW for 7–8 hours, or on HIGH for 3.5–4 hours, until the potatoes are very tender and break easily with a fork.
Mash and melt for texture
- Use a potato masher to mash about half the potatoes for a thick, chunky texture.
- Stir in the cubed cream cheese and sour cream until fully melted and smooth, with no visible cream cheese lumps (pause to scrape the sides if needed).
Finish with cheese and bacon
- Stir in 1.5 cups shredded cheddar and half the bacon until the cheese is melted and the soup looks creamy and uniform.
Serve
- Ladle the soup into bowls and top with the remaining shredded cheddar, remaining bacon, and sliced green onions.

Pro tip: For the thickest texture, mash the potatoes while they’re still very hot so they blend smoothly. Store leftovers in the refrigerator up to 4 days; reheat gently on the stovetop or microwave and add a splash of broth if it thickens. Freezer: yes, but cheddar may soften slightly after thawing. For a dairy-reduced option, use reduced-fat cream cheese and sour cream, and swap in a lower-fat shredded cheddar blend.
