Sear the steak
- Heat a griddle to high heat and add the oil until shimmering.
- Season the sirloin steak with salt and pepper, then cook for 3-4 minutes until seared; set aside.
Cook the vegetables
- Add the bell peppers and onion to the griddle and cook for 5-6 minutes until softened, stirring occasionally.
- Add the corn kernels and garlic, cooking for another 2 minutes until fragrant.
Make the cowboy sauce and finish
- In a separate bowl, combine the soy sauce, BBQ sauce, Worcestershire sauce, and brown sugar, then pour over the vegetables.
- Return the steak to the griddle, toss everything together for 2-3 minutes until coated, then garnish with green onions.
Notes
For best browning, keep the griddle hot and avoid overcrowding when searing the steak. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat in a hot skillet or on the griddle until warmed through. Freezing is not recommended because peppers and corn can soften after thawing. For a lower-sodium option, use reduced-sodium soy sauce and keep the BBQ sauce at a reduced-salt variety if available.
